Across India the same snack goes by many names — pani puri, golgappa, puchka — and Kolkata's version has a personality of its own.

The filling

Kolkata puchka is usually filled with mashed potato spiced with chilli, black salt and a little lime.

The water

Tamarind gives the water its sour depth, balanced with spices and fresh coriander.

Eat it fast

The shell softens in seconds, so each one is filled and eaten on the spot.
